
If you walk through a piazza at apertivo hour in Italy, it’s a sea of orange with this cocktail in seemingly every table. The trend has caught fire stateside too and has even sparked
a fierce debate over if it’s good or if it sucks. Grapefriend has been
drinking them for years since the slight bitterness is an excellent refresher after a day of wine tasting. I recently hd a great one at The Mermaid Inn (not overly heavy on the Aperol), but here’s the recipe so you can make them yourself:

- 2 parts Aperol
- 3 parts Prosecco
- Splash of soda water
- Orange slice for garnish
