I actually never liked Malbec til I had it with asado – what they call a huge mixed meat grill in Argentina. They’ll seriously grill any part of the animal, but when you try it with a gritty, hearty Malbec you know you’ve achieved grill pairing perfection.

I just got back from Aspen Food & Wine where I tried a number of reds from all over Portugal. They’re big, bold, and fruity but have lots of acidity that keep them fresh.

cab blends
Cabernet is a go-to for steaks, and lately I’ve especially liked the gritty ones from mountainous areas.
