Happy Easter! It’s a day filled with lots of yummy holiday brunches and dinners, and here’s a perfect cocktail for the day. First because I’m newly into Aperol – we had it at the end of a long though awesome day of wine tasting and it was the perfect bitter balance to all the sugar. And when you mix it with club soda the spritz is awesome. And secondly, the cocktail looks like it has bunny ears. What more can you ask of a drink?

Slice of fresh papaya
¼ oz. Agave Nectar
1 ¼ oz. Avión Añejo tequila
½ oz. Aperol
½ oz. orange juice
¾ oz. fresh lime juice
Fresh papaya for garnish
Add a slice of fresh papaya and agave nectar to your glass (the amount of nectar just depends on how sweet you like your cocktails, but usually about a teaspoon will do the trick). Muddle to release the papaya flavor. Add 1¼ ounces of Avión Añejo, and ½ ounce each of Aperol and orange juice. Then top off with ¾ ounce of fresh lime juice. Add ice and give it a good shake.
Strain over ice, and garnish with a fresh slice of papaya.

It’s a great Italian aperitif – bitters,slightly sweet, herbal. Similar to Campari but less alcohol, and great just with a splash of club soda & ice!
